If you can't spare the time to stuff a mushroom then you don't really need a kitchen in your house. (But, to be honest, I have met a few people in recent years who avoid their kitchen at all costs). Peppers, onion and breadcrumbs sounds like a fine choice of filling to me. If you do fancy a richer filling, though, rillettes can be delicious.
