The simmering doesn't get rid of all the alcohol - that would need a fair bit of serious boiling - but this isn't too strong. If I'm adding this to white wine and drinking while finishing off the evening meal, then it's probably a good thing for all concerned that there's not too much alcohol.Phil in the Kitchenhttps://www.blogger.com/profile/15904292856978631382noreply@blogger.comtag:blogger.com,1999:blog-2578151607368747182.post-46276568355123896572015-10-24T13:39:02.073+01:002015-10-24T13:39:02.073+01:00Interesting Phil, especially the sauvage. My fruit liqueur idea is to dump a load of fruit and a bit of sugar in vodka or gin and leave it for a year. Doesn't simmering this get rid of all the alcohol?Choclettehttps://www.blogger.com/profile/00173996730095174268noreply@blogger.comtag:blogger.com,1999:blog-2578151607368747182.post-40873384546558056162015-10-07T19:37:49.269+01:002015-10-07T19:37:49.269+01:00Wonderful - I actually made some of this last year...Wonderful - I actually made some of this last year, following a similar recipe and loved it, even more so than the more traditional crème de cassis. I agree with you, it's much nicer to keep the original title. Guess though we could use the frozen coulis to make this as well :-) Sounds good. As Jean said, you can have too much blackberry jam! Not only that but I was looking at some of those gorgeous clip top bottles this week and wondering why I needed some - now I know! It's a shame we didn't bring some Alcool pour Fruits back with us but I think there's a bottle of vodka lurking somewhere in a kitchen cupboard.<br />Thanks for a very useful recipe!Jeanhttps://www.blogger.com/profile/09726164724131916224noreply@blogger.com
